You miss the offer and the university decides whether to reject you or not.

Their discretion. If your offer was CCCCC and you got A*A*A*A*D you can still be declined if they feel like it.

If I get an offer of AAA, what happens if I get A*AB? Admittedly, I don't really know how the process works anyways. Would an extra B help at all?

Technically, you haven't meet the conditions of your offer because they want an A in all subjects so they can reject you. Alot would still reject you but some unis may accept you. It's really the unis choice if you don't meet the offer.
Then you miss the offer. It doesn't matter if you exceed it in one subject, you have to get all the other subjects to level of the offer too. Unis may still let you in, but this is highly risky.

An A* is just a high A.
A B is not an A.
Hence, you would be rejected.

You'd stand a good chance of being accepted if they had places still though.
