I would say the study of Ancient Greek and Roman civilisation through the medium of Latin and Greek literature. Don't quote me though. It is such a diverse and all-encompassing subject that it is impossible to hav a definitive definition.

I definitely agree, classics has philology, linguistics, history, anthropology, philosophy... there's so much covered in the subject that it's impossible to give one straight definition

When people ask me, I say that Classics is "the study of the Ancient Greek and Roman civilisations." Of course, that includes a huge range of subjects: language, history, literature, philosophy, archaeology, art, philology, and more.
