Im in the middle of writing my personal statement. Would you say its more ideal to have 3 thicker paragraphs or for example 5 or 6 smaller ones?

It's a personal statement and therefore everyone's will be different and unique. If your preferred writing style is to write long paragraphs then that reflects you as an individual. It should of course adhere to standard conventions where each paragraph refers to a single topic or theme.
