Further maths because you need to have done maths to even take the qualification anyway. Plus it's the hardest and will (probably) consist of a mixture of pure, stats and mechanics anyway.

For further maths you can include the later modules in the whichever applied option you choose. So if you did maths with mechanics you might do M1/M2, and then include M3 in your further maths A level.
Do Maths and Further Maths if you are applying for maths or are good at maths and want two a-levels in it. I wouldn't reccomend Statistics and mechanics/stats choices make negligible difference.
