I want to do a sociology degree and then a PGCE in primary teaching but I've looked online and many say having a sociology degree is worthless or doesn't create high employment, is this true?
No, it is utterly not the case - it's the class of degree that is more important and sociological skills are applicable to a whole range of careers. You should check with careers though about Primary PGCEs after doing a Sociology Degree as Primary Schools might prefer a degree in a nominated subject (e.g., English, Maths, Science). Worth checking out, but you should be OK and if you study the sociology of education it will actively make you a better teacher.
