How does taking a gap year affect my chances of an offer from these unis?

Hey, I'm a student who just finished Lower Sixth. I'm being predicted 3 A*, (with an A* in EPQ), and I was thinking of taking a gap year to go to China to learn Chinese (I'm half-Chinese). The universities I'm currently thinking of applying to are Oxford, St. Andrews, Edinburgh, Warwick and York.
I was wondering if anyone knew which universities would care about me doing deferred entry (I know Oxford definitely will), and whether there are any other options I can take for deferring while keeping my chances of getting an offer high.
Which subject are you applying for. This will make a difference.

Only some subjects are bothered by a gap year

Most universities will have information like https://uni-of-oxford.custhelp.com/app/answers/detail/a_id/456/kw/defer/p/27 somewhere on their website (either for the university as a whole or for a specific dept/course).
If you can't find it for your chosen universities and courses then you can always contact them by email to ask directly
