What grade would I get in a unit with 3 assignments, in which I got 2 distinctions and 1 merit. Would the one merit drop my grade for the unit down to a merit?

Correct. From the specification (with my added emphasis):
"• to achieve a Distinction, a learner must have satisfied all the Distinction criteria (and therefore the Pass and Merit criteria); these define outstanding performance across the unit as a whole"
