it depends on which UoL colleges you are talking about. If they are LSE, UCL and the like then yes. If Goldsmith, Birkbeck, then no.

Professors at top US unis do have undergraduate degrees from Notts, B'ham, etc, but they tend to have top US/UK for PhD. In terms of job prospects, the name recognition of "London" probably helps, but LSE & UCL are recognized by college students, etc, Goldsmiths, etc, aren't. But you shouldn't just pick a university on reputation..(though, I need to repeat that to myself :p:)

SOAS will be excellent if you intend to write a thesis related to Asia or Africa.

It depends on where you apply, and what you did other than studying. Most US unis expect you to have at least a few years of work experience (in a relevant field), have a lot of extracurricular activities, write a top-notch statement of purpose, and provide good references.
