so I've got an interview at UEA, but my UCAT was 2630 B1, if my interview goes really well, might I still be rejected because of my UCAT?

UCAT score is 50% of post interview scoring, with the marks achieved at interview, so if there are more people with combined total above yours than there are offer places, yes, you may get rejected.
For 2022 entry, >90% of those with >3000 UCAT got an offer, compared to 36% of those with a UCAT 2620-2690
