how do you write out structural formulas of more complex compounds?

i'm specifically asking if a dicarboxylic acid/ion would be written like:
1. HOOCRCOOH
or
2.COOHRCOOH

and i was also wondering how you would draw a displayed formula of something like sodium ethanoate since we cant draw a line for the O,Na bond since it's ionic

For the dicarboxylic, I would rite it as the first one as it shows which atom is bonded to which as normally you wouldn’t bond hydrogen to an R group

For sodium ethanoate, you can draw it like this
