I attempted to calculate the potential stars in the observable universe by doing 1 trillion (no. of stars in one galaxy) x 100 billion (no. of galaxies in the universe) and I got 1e+23.

I am not good with numbers, so how much would 1e+23 be?

Its comparable to the number of stars in the observable universe.

It's a hundred billion trillion or a hundred sextillion or 102310^{23}.
