hiiii, i also do OCR and we just finished that chapter.
I'm pretty sure we just need to know the basics, as in what the bacteria do, not the whole cooking process.
like this is all my notes say:
- how bread is made→yeast is combined with water and sugar. respires aerobically, CO2 rises the bread
- how is beer made→yeast respires anaerobically to product ethanol
- how is cheese made→microorganisms feed on the lactose in milk to produce that tastes and texture
- how is yogurt made→2 bacteria: one makes lactic acid, other makes ethanol
