I have gotten the follwing grades : AAAU, A's in Bio, Chem , Physics at AS level. I want to apply to universities but most of them list AAA in Biology , Chemistry and one other subject. Since I have a A in Physics and a total of 3 A's and likely to get predicted A*A*A , will missing out on mathematics be a problem or should i retake it as well.

Based on your post it sounds like you're doing IALs or A-levels in Wales or NI, and so have AAAU in your AS levels and are predicted A*A*A in your A-levels?
Dropping maths and continuing with 3 should be fine for medical schools that don't score AS level results. You'll need to check individual medical schools to see if they score AS results for IAL/NI/Welsh students if that is your situation as some might (QUB I think might for example).
As long as you avoid medical schools that score AS results though you're probably fine
