I would love to do research as part of my career, but talking to other biology/biomed students made me aware of how much the medical school curriculum is lacking in terms of basic sciences and lab skills.
Is there any suggestions on how I could fill in the gaps of knowledge?

I probably wouldn't worry too much about "filling knowledge gaps by reading" at this point.
If you are interested in research, I would advise intercalating and doing a research project as part of your intercalation. I would also suggest considering trying to get involved in research projects, perhaps a summer lab project might be a good idea at your stage?
