Why is amylose insoluble? I’ve tried looking around the internet, and there’s no explanation.

something to do with hydrophobic fatty acid tails. eg in glycogen they face inwards and hide behind glycerol heads from water, maybe something occurs for amylose

It's a straight chain but it ends up coiling up. The coil makes it into a granule. I'm not sure why the granule itself isn't soluble
