There's no preset formula, it's really up to you. Books are a good way of showing evidence that your interest in your subject goes beyond the curriculum though which is why it's a good idea to include in your personal statement. It's definitely not supposed to be a list - pick out a few books (I wouldn't suggest any more than three, I think I only did a couple) that you thought were particularly interesting and (briefly) explain your thoughts. I can't tell you how many words to dedicate on this over the other things on your personal statement, you're going to need to make a judgement on how important you think it is compared to the other things.
