A level biology quick question about recombinant DNA technology

There are 3 ways of obtaining DNA fragments:
Restriction endonuclease
Reverse transcriptase
And gene machine

But why are there 3 methods? Like how come we can’t just use one method to obtain DNA fragments from an organism? I know the methods of each one but just not sure why there are different ones and in which circumstances we’d use each one in. I’ve tried googling this but I’m getting no answers. Please help!

I think is the most common Restriction endonucleases method, its the only one I have to learn about for my exam board I'm pretty sure (ocr a)
