Beetroot and Alcohol
We recently completed the experiment investigating leakage of pigment, but our results were different from any we have seen. Absorbance went down instead of up as concentration of alcohol increased. Can anybody suggest reasons???

I'm not entirely sure but couldn't temperature have an effect? So if the more concentrated alcohol was colder for some reason that would explain it...
Also perhaps using older beetroot or not the same part of the plant would have an effect too.
