No - make a point of it being 'volunteering' not shadowing - it has much more kudos!

Unis much prefer volunteering in places like hospices - rather than aimlessly following a doctor around in a hospital because it shows your caring which is wot they're looking for!!!
With respect to your question about sports and music - I am not musical at all and am absolutely rubbish at sport and have got two offers for med so far - However, I do reccommend you mention some sort of hobby on your personal statement to show ur not just a complete swot who does nothing but study all the time and to make you stand out - you may also want to include something which involves teamwork - not necessarily sport but something like organising an event or Duke of Edinburgh or a Saturday job as they often stress the importance of this
BTW I think the key to personal statements is originality - nething that makes you stand out is great!
