I know there are more ideal volunteering roles- I have emailed many care homes/ hospices to volunteer but none have replied to me. During the summer, I worked in a summer group for children and also volunteered in a nursery for a few weeks. I also volunteer in a charity shop Could I include this in my medicine applications, and what exactly could I write about it?

More relevant Medical experience would have been a bit better, but oh well - you make do with what you've got. You should go and reflect on it and what you learnt (skills and/or experiences) that you think will help you be a better doctor, and then you should include this on your personal statement. You said you worked in a summer group for children - if this was a paid position, that goes in the employment section of UCAS, although any experiences you had there that you might want to mention also go in your PS.
