Of mice and Men Quotes and Structure

Could some of you guys list all the important quotes please?
Also would you be able to show me how to structure the essay?
My examboard is WJEC I think.

well when i did of mice and men this year we did about crooks. if your doing about him then "crook's bunk was a long box...." is key to showing how black people were treated, they were treated no better than an animal with no rights. then another would be (if i can remember correctly) "Everybody wants a little piece of lan'. I read plenty of books out here. Nobody never gets to heaven, and nobody gets no land" shows that his dream which is the american dream doesnt come true for every one. to achieve the american dream you have to find equality and happyness in everyone. Crooks has now stopped believing in god. this is because if god was real then he would have his dream because god doesnt judge anyone.
i hope this helps but im sorry if your not writing about crooks because i cant really help you as i did no controoled assessment on anyone else in the book.
