For complex numbers, if you are given 2 roots, such as z=3+i and z=3-i and asked to find the values for p and q in the equation z^2+pz+q=0, would you be given the mark if you find p and q using the methods -(alpha+beta)=p and alpha x beta = q?

For all A Level maths exams, a correct answer using any mathematically valid method (doesn't even need to be on the spec) will always score full marks, unless the question specifically asks you to use/not use a certain method.
