GCSEs don't really matter as you have to do core subjects (maths, english and science). For A-level you would need biology and another science (chemistry, maths or physics), you may want to do three sciences or you may want to do a subject you enjoy.

Some medical schools care about GCSE’s more than others. Those that do put a significant weight on them, typically score your top 6-9 GCSE grades.
Subject choice doesn’t matter but you need your essential Maths, english and sciences. Doing triple science is a good idea.
For a levels: biology and chemistry, third subject can be anything really.
Very few medical schools do not require biology and some will accept maths or another specified subject instead of it.

What @Hamzie_ is good but I would say that you do not have to do separate science, but it may be helpful with doing A-level sciences as you will have covered more content.
