Geographically it's in the Middle East, but culturally and religiously(?) it's more European, i.e. most if not all Middle Eastern countries are Muslim countries, but Cyprus is a Christian country. It is in the EU and uses the Euro, so yeah I'd count it more European.
However, the food we have is really similar to Middle Eastern food.

I don't want to live in UAE, but in Dubai SPECIFICALLY.

Lebanon or Jordan. Although some of the other countries have a very rich historical background and would be really interesting but I think that's probably better for a holiday

Unfortunately I'm on my phone so it's hard to go wikipedia copy paste on you. But UAE is a federal monarchy made up of 7 monarchies, each with one ruler. You didn't specify what type of state so I'm sorry. And yes, it would be very very relevant to me to go to Dubai not somewhere else in UAE. They are very different, not all emirates are the same and I think it is relevant.
Trust me I would've seen the UAE comments anyway and found out about my 'lack of knowledge' myself just as I saw other comments. No one says Hey I visited UAE but they say Hey visited Dubai/Abu Dhabi. It is a difference.
