Long Story short, I joined my school year 11 meaning I could only take the core GCSE's, Maths English lit/language, Science and RE. My offer got declined because of this and I was wondering if there was any way the University of Reading would reconsider as I take maths and double business and my predicted grades are decent, B in maths and Double distinction in Double business.

Why would your range of GCSEs be the problem? What specific reason was it? Was there a certain subject you were supposed to have? Most universities only care about your maths and English grades.
Anyway, a university would only reconsider if something has changed from your initial application. For example, if you got better grades than you expected and applied again through clearing, they might accept you.
