Ethanedioic acid is a stronger acid that ethanoic acid. The oxygens on the second carbon withdraw charge from the carboxylic acid anion and make it more stable. see attachment for details.

There is no peak at about 1680 cm-1 typical of a carbonyl group. Glucose exists as an equilibrium mixture of the chain form (Carbonyl intact) and the ring form (no carbonyl). The lack of a peak at 1680 shows that it must exist as the ring form mostly.
