Using layer of oil in investigation of water loss from plants A level biology

A few drops of olive oil is poured on the water surface because it will form a layer over the water surface and prevents the loss of water due to evaporation.
How does it stop evaporation?

Water and oil have different densities (oil more dense) and they don't mix. So anything to do with lipids is waterproof I think.
