why do they say you can't leave food out after 2 hours?

Bacteria, Fungi and Viruses can land on your food. Have you ever seen the condition of left-out yoghurt or bread? Mold is present within the air, it's stuff like this that can cause you to have an upset stomach or become seriously unwell.
Because it can become contaminated or suffer extensive heat damage in hot weather.
