How do I go about writing a personal statement for two different courses? I want to apply to either aerospace engineering (foundation year) or chemistry and I don't know how to construct my ps.

It’s going to be pretty much impossible to do this. Why do you want to apply to 2 such different degrees?
What I would normally suggest is that you write 2 PSs. One for each subject. Articulating your interests and motivations for picking a degree will usually help you to figure out which one you prefer.
