How to join clubs if you're on a gap year?

It's a long story but basically I am taking 2 gap years and looking to reapply medicine again this year. But I dont have much EC activities :confused:

I mean, I have many voluntary experiences in clinics and carehomes and helping out in the primary schools, but I havent joined any clubs AT ALL because I didnt think I needed to. Did participate in fundraising events in secondary schools but that's like 5000 years ago!!! Wouldnt the unis want something more recent? I only attended art clubs and IT clubs when I was in secondary school, in 6th forms I thought I should focus more on studying instead so no committees, no involving in the student parliment things were done!

I do have personal interest such as crafting, knitting etc, but this wouldnt be enough right? I am searching through the internet like mad and I just couldnt figure out how to join a club if I am not in a school :frown:
