PPE vs Philosophy and Economics vs Economics and Maths

Current 2nd year medical student here rethinking my degree choice. My A Levels are Maths, Biology and Chemistry with an A* in Biology. I'm not really digging medicine and have been considering changing degrees. Right now the 3 degrees in the title have caught my eye.
I was wondering which of these would have the best value in the job market and increase my chances of employment - whilst I understand that Economics with Maths would likely be the biggest advantage would I be disadvantaged by doing Philosophy and Economics as I have a relatively keen interest in Philosophy.
Also what unis do you think I could apply for and have a reasonable shot of getting in with these degrees?
I'm not entirely sure what I want to go into if I do change my degrees but I guess it'd be something in finance or law.
