It's unlikely many universities will require an interview for Microbiology. I do Microbiology at the University of Leeds and had to attend a short interview as part of the application but it was super casual. As for the best universities for microbiology - look at what modules are offered by each university course and which one interest you the most. Generally, look at different stats on each university as a whole and for biological sciences courses (e.g. graduate employment, student satisfaction, etc.)
