It depends on the specific modules that you're taking and the degree course that you're doing.

I would say it's something down the middle; half maths half essays.

The more mathematical units are in econometrics and mathematical economics (if you get them).
The other units are more essay based, but still use mathematical modelling albeit to a significantly lesser extent. Mathematical modelling in this case involves things like the Cobbs-Douglas function, economics accounting equation, and straightforward differentiation. Nothing particularly challenging or above AS Level maths. You would be mostly be writing essays in these modules.

For mathematical economics, it kick things up a notch and require you to know differential equations, difference equations, and matrix operations. These are topics you would cover in further maths.

Econometrics is mostly hypothesis testing and multiple regressions.

If you're not doing a quantitative degree, then there's next to no difficult maths involved. This would then be predominantly essay based.

Largely depends on the universities and modules in question. Though typically higher ranked and reputed unis have more quantitative economics degrees.
