If I were to gain an MSc in Economics with an undergraduate degree in Politics and Economics, would that make me equally as qualified for economics related professions as those who studied undergraduate economics?

In terms of entry requirements for economics graduate schemes yes. In terms of whether you have the appropriate skills for the role, depends on the graduate scheme in question as well as the syllabuses of the undergrad and postgrad.
