Well, its of japanese origin so they are equal in what part you stress.
So its not Toff-fu, its To-fu.

I've been having a discussion with my mother, who believes that you pronounce the word "tofu" as if it has an 'ff' digraph, rather than a single 'f', so i want to get peoples opinions from here.

Do you pronounce tofu as
1. Toe-fu
or 2. Toff-u?

In actuality all syllables are stressed equally in Japanese so it's not tou-fu. It's to-fu.
I can see how you could've thought it was tou-fu though, it's alright.
