Do GCSEs and A-Levels matter for postgraduate medicine?

Is undergraduate degree & work experience the only important thing?
If you mean 'Graduate Entry Medicine' then yes, A levels and GCSEs are still a specific requirement for some Unis - and even when they are not 'a requirement' they will still be used to score your application and can be the difference between getting an interview or not

Btw, 'GEM' is still an undergraduate course (it leads to exactly the same 'first degree' qualification as all Med courses). Its 'Graduate Entry' (omitting the first year) not a different postgrad qualification.
