On my gap year I worked, read lots of books I always wanted to read, learnt how to play the guitar, travelled to France and around the UK using the money I made from my job, went to see some musical acts I wanted to see, learnt a fair bit about my university course, saw a lot of TV shows on my list, hung around with friends and family...
You need to work out your budget, how much time you have and also what appeals to you. I went to SE Asia backpacking, mixing courses with volunteering which was amazing.
