I'm about to choose my IB subjects for 11 grade and I want to apply for vet universities and need some advice. Do I need english A, or could I instead do German A and english B since my first language is german?

Yes, you can take German A and English B for Vet Science. However, you would most likely be expected to take one of the many English proficiency tests. Or if not needed, the university may accept your secondary school English grade. I would suggest that you visit a few university websites to check on the English requirement.

Look at the IB entry requirements for Vet at a range of different Unis and check what they want / prefer - examples :
