Should I capitalise subjects in my personal statement? e.g Maths or Physics

What about a topic like mechanics or thermodynamics?

If it is in the name of a qualification (e.g. A Level Physics or BSc Mathematics) then capitalize.

Otherwise, no. You wouldn't write 'my favourite subject is Physics'. The same applies to mechanics and thermodynamics.

With that having been said, my grasp of English grammar is stunningly poor so I am sure somebody can come along and provide a more detailed answer.

No

(And unless you're applying to a single choice then you shouldn't capitalise a degree title - 5 different degrees are not a proper noun, and you shouldn't be talking about your A levels in a way that requires capitals).
