What aren't Hindus "supposed to do"?
Hinduism doesn't have any fixed rules of do's and don'ts. Just guidelines or recommendations - ultimately you decide for yourself.
Many practising Hindus mainly in South India eat beef anyway.

And atheism is valid in Hinduism and has been since the Vedic era. Some of the earliest and most influential Hindu philosophers were atheists - e.g.: Kapila who founded Samkhya philosophy and considered the worship of god/gods to be a slightly pointless activity.

In the UK, the entire South Asian community uses the term more like an ethnic marker, akin to Sri Lanka's divide between Tamils and Muslims. Hinduism doesn't actually say anywhere that you're not supposed to eat beef, the closest thing is actually something the Buddha said to his followers. Hinduism is a culture and not a religion as it is viewed by westerners.
