I didn't apply for psychology so forgive me if this is a bit misplaced, but maybe try to discuss specific things you've enjoyed in your course (maybe a particular theory) and any wider reading you've done around it. You could also talk about things on the course you're applying for that interest you and maybe how that links to what you're currently studying.
