If you are self-employed with a company, why haven't you had pay slips from them? Ask them.

Depends how you're self-employed, if you're a company director, you might either be taking dividends or salary - if salary, in which case you should have payslips - if you don't, well...

If you're taking dividends, they'll go on a tax return. If you're self-employed in another way, your income will go on a self-assessment tax return too, or at least it should.

So in short, a self-assessment tax return would be the best way to prove your income. If you don't have one, I don't know what to tell you - unless it's your first year of self employment - then maybe you could get an attestation from an accountant?
