Some can open up as early as August, whereas others can be well into the next year. It depends on the organisation, though most of the big, well-known, or sought after ones will open up by September.

There are tens of thousands of firms that recruit graduates, each with their own process. There isn't a big list of them anywhere, it's not like, say, UCAS. You'll have to know which firms you want to apply to, and use their own application method. Some websites like Target Jobs showcase companies in many different sectors, so is worth a look. Gradcracker is good for STEM, particularly the E part.
