Do I need to include the job i'm applying for in my CV??

In my personal profile/personal statement, do I need to mention the name of the company/role i'm applying for or not

No, that info goes in your covering letter.

The cover letter is addressed to the company, specifies the role (ie Customer Service Manager as advertised on Indeed, reference #123456) and says why you think you are suited to that particular job (eg I have 3 years experience working in a customer service environment).

A CV is also tailored to every individual job and gives the evidence to support your letter, in bullet points with numbers, eg

Reduced customer complaints about broken widgets by 20% over 2 years by introducing safer storage of items
