You could try getting experience in each branch of Psychology
e.g. Educational Psychology - a SEN school

You could also do something like peer mentoring, giving you skills that are transferrable into psychology as a whole, particularly within treatments.. such as psychotherapy.

Especially for English, the way to make your PS 'stand out' is to make sure it covers academic ground well - if these activities help you to do that, fine, but if not there's no point. Read around your subject, and pursue an aspect of it that particularly interest you.
