You're misunderstanding what the purpose of these are for. It's not about adding some kind of special course that you hope no one else has done that will get you a gold star on your application from the admissions tutors - that's not how it works.
It's about exploring your interest in the subject further, and then reflecting on those experiences critically and incorporating them analytically in your PS. In which case, you could do anything broadly in that area which seems interesting to you.
