Yes you put a full employment history working backwards from today until ucas won’t allow any more entries.
(Actually it isnt that important if these are just part-time & holiday jobs you did whilst at school etc - this section is really only there for mature applicants so they can account for any gaps in education.)

I'm a mature applicant, but most of my work is unrelated to my course choices.

That doesn't matter, just fill in your employment history. I study Chinese, none of my work experience had much relevance, but I did pull out transferable skills from my work history into my personal statement that would help me become a good student - Flexibility, working with a broad range of people, self motivation etc etc
