How can I be critical with my essays and to describe things rather than citing an author and than just retelling what the author said and all of that. And how to choose the right text to cite from the author and to make sure its relevant.

My suggestion would be if you are struggling with this kind of area, reach out to Learning Development or Student Support at your university. They can help you find your writing style, structure essays and so on!
