What am I legally allowed to take with me when moving out at 16?
Can my parents decide to not give me my information documents? e.g(passport, birth certificate)

Don't move out unless you are prepared with the relevant support. Moving out too early could hinder your progress

I do not think they can hold your documents against your will.

As far as i know, they can not withhold these documents. They are rightfully yours.
