How do I enter predicted grades onto UCAS?
Im aware that my referee does it but how do I say that I've achieved grades but I'm resitting a subject? I.e., I've achieved a B in Chemistry, but I'm resitting because I want an A? When I try enter a qualification I only have options to qualification date up to 2021, but I'm resitting in 2022?

You need to list the subject twice. Once with your achieved grades, then as a pending subject with a future award date. Your ref will be prompted for a prediction for that one.
